Born in Hialeah and raised in Little Havana, Michael Beltran grew up in a traditional Cuban-American household where his grandparents, former bodega owners in Cuba, emphasized family meals. He honed his skills at Miami's celebrated restaurants under legendary chefs, fusing high-level technique with storytelling through food. As chef-owner of Ariete Hospitality Group, he oversees a portfolio including Michelin One Star Ariete in Coconut Grove, Bib Gourmand Chug’s Cuban Diner, Navé, Brasserie Laurel, The Gibson Room, and others. His flagship Ariete melds Cuban flavors with New American dishes, earning Eater’s Restaurant of the Year, Miami New Times’ Best New Restaurant, Bon Appetit features, and two James Beard Best Chef: South semifinalist nods. Beltran remains deeply rooted in Miami, driving the city's culinary evolution as a new generation leader.
